Making sugee cake is not just a business; it is a labour of love for Melba Nunis, owner and extremely personable chef, of Simply Mel’s. The way to a great sugee cake is affection and good cheer, and there’s plenty of that in Nunis’ tasty cake, studded with almond nibs. She grew up helping her mother whip up the family recipe, and now it is available for all at her cosy restaurant specialising in Melakan Portuguese cuisine. Angelina Signature Cakes

Growing up, there was always sugee and fruit cake at Angelina Skelchy’s family Christmas table. So when Angelina found her grandmother’s long-lost sugee cake recipe, she knew she had a winner on her hands. Depending on the recipe, this deceptively humble-looking cake can take hours of preparation time, and a deft hand to whip the butter, egg yolks and sugar into a light and wispy foam. Angelina’s sugee cakes are available all year around, but come Christmas, she prepares a special sugee fruit cake to order.

Just Heavenly is an artisanal cake brand with a chain of shops bearing their luscious sweet desserts, a café and an online presence for specialty cakes. Firm favourites, they are rightly popular for their gorgeous, high quality cakes. Their sugee cake is a moist and hearty bite, packed with a rich assortment of mixed peel, sugared winter melon, crystallised ginger, cashews, almonds, raisins, almond flour and brandy. It is an old family recipe, traceable back to Ceylon. Available made-to-order and for Christmas only, on the shelves.

Sugee cakes have to be left to sit for a few days to give it a richer taste.

Diana’s Home Bakery

With 30 years of baking behind her, Diana Machado has her sugee cake recipe down pat. Rich, moist and more-ish, the cake is perfumed with vanilla, brandy and buttery goodness. In addition to ground almonds, Diana packs the cakes with almonds nibs for that extra crunch. Diana is a one-woman show, so ample notice of up to a week for her cakes is a must. If it is a special occasion cake, complete with handmade sugary decorations, it is best to get in touch a few months ahead. 

Grace Home Cakes

Sugee cakes can be tricky to master, so a day at a baking school could just be the answer to home domination of this indulgent dessert. Upon popular demand, Grace Home Cakes included a tasty recipe for sugee cakes in its curriculum. Grace Mariasoosai is the matron of the school, utilising 25 years of experience to dispense sage advice on baking matters. Her tip for a good sugee cake – quality ingredients and recipe. Her sister, Cecelia, makes exquisite cakes, including sumptuous sugee cakes, to order.

Suanson Specialty Cakes

For a little taster, Suanson’s individual portions should do the trick. Presented as a cupcake, it is catered to the masses; the sugee cake here is sold sans brandy and is instead flavoured with orange zest. Weight-watchers would be glad to find that their version has a lighter bite to it than usual. Cakes are also available by the kilogramme.
